A great "caviar" to spread on black rye bread. YUM!!!

Recipe Ingredients for Carrot "Caviar"

2 1/2 cups onions, diced
3 1/2 cups carrots, shredded
2 1/2 tbsp vegetable oil
2 tsp vinegar
1/2 tsp salt
1/4 tsp red pepper flakes
1/3 tsp coriander
2 tbsp tomato paste
1/2 cup water
1/3 tsp sugar

Recipe Directions for Carrot "Caviar"

  1. Saute onions in oil until translucent

  2. Add shredded carrots, tomato paste, water, and cook covered until everything is soft, about 20-30 minutes.

  3. Add the spices and vinegar, adjust to taste, and bring to boil again.

  4. Turn off heat.

  5. Serve cold.
