Delicious, healthy pureed soup! I use low-sodium broth so my sodium is lower.

Recipe Ingredients for Carrot-Cauliflower Soup

1 small onion
1 T minced garlic
2 T Olive Oil
1 head Cauliflower
3 medium Carrots
4 c Vegetable broth
1/2 c Skim milk
1/2 t nutmeg

Recipe Directions for Carrot-Cauliflower Soup

Saute chopped onion until translucent. Add garlic and saute 2 minutes. Add cut cauliflower and carrots, saute 5 minutes. Add broth and bring to a boil. Simmer for 30-40 minutes until veggies are tender. Puree in blender until smooth. Return to pan and add milk and nutmeg. Heat through and serve.
