Recipe Ingredients for Carrot Cake Reinvented

3 cups carrots, shredded
1 cup apple sauce, unsweetened
2/3 cup raisins
1/2 cup crushed pineapple, drained
1 cup brown sugar
2 eggs
3 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp vanilla
2 tsp cinnamon
1/2 tsp nutmeg, fresh grated
8 oz. Fat Free Cream Cheese
1/4 cup light brown sugar
1/2 cup splenda
1 tsp vanilla

Recipe Directions for Carrot Cake Reinvented

  1. Shred carrots and combine with raisins, pineapple and apple sauce. In mixing bowl place brown sugar and eggs and cream to combine. Sift dry ingredients and add to the fruit, stir to combine. Put all in mixing bowl with vanilla and mix to combine. Bake in bundt pan at 350 for 1 hour.

  3. Whip cream cheese until smooth and free of lumps, add Sugar, Splenda and vanilla and whip. Frost cooled cake and serve.
