Delicious carrot cake with light cream cheese icing

Recipe Ingredients for Carrot Cake

1 cup, packed Sugars, Brown
48 tsp Unico Sunflower Oil
0.5 cup Chopped Walnuts
2 cup Shredded Carrots
2 cup Gold Medal All Purpose Flour
185 grams Cream Cheese Light
8 tbsp Confectioners Sugar

Recipe Directions for Carrot Cake

  1. Preheat oven to 180 C (or about 350 F)

  2. Combine oil and sugar and beat. Then add eggs one at a time. Then add all other ingredients and stir with a wooden spoon till blended. Put in greased pan or cupcake forms and bake for 30 minutes. Check with toothpick in the middle.

  3. For icing, blend sugar, cream cheese and softened butter. Add Splenda to increase sweetness, up to 1/2 cup.
