Remember to reserve the pineapple juice from the canned pineapple, because you need the juice for the glaze.

Recipe Ingredients for Carrot Cake

1 c all-purpose flour
1 c whole wheat flour
1 T ground cinnamon
1 t nutmeg
2 t baking soda
2 t baking powder
1/2 t salt
1 c brown sugar
1/2 c sugar
8 oz crushed pineapple, in juice
3/4 c salad oil
6 egg whites
1 t vanilla
3 c carrots, shredded
1 c golden raisins
1 c powdered sugar

Recipe Directions for Carrot Cake

  1. In a large bowl, stir together all-purpose flour, whole-wheat flour, cinnamon, nutmeg, soda, baking powder, salt, brown sugar, and granulated sugar. Set aside.

  2. Drain pineapple, reserving the juice. Place pineapple, oil, egg whites, vanilla, and carrots in large bowl of an electric mixer; beat until well combined. Add pineapple mixture and raisins to flour mix; stir until evenly moistened. Spoon into a well-greased, flour-dusted 9 X 13-inch baking pan.

  3. Bake in a 350-degree oven until a toothpick inserted in center of cake comes out clean, about 45 minutes. Let cool in pan on a rack. Pour the pineapple glaze over the cake. Cut into 2 X 2-1/4 inch pieces.

  4. Pineapple glaze. Stir 1-1/2 cups sifted powdered sugar with about 1/4 c reserved pineapple juice until mixture is smooth and has a good pouring consistency.
