Wheat free recipe for carrot cake

Recipe Ingredients for Carrot Cake

12 oz spelt flour
12 oz carrot
1 tsp baking powder
1 tsp baking soda
1/4 tsp allspice
1/4 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
10 oz sugar
2 oz brown sugar
3 eggs
6 oz plain yogurt
6 oz vegetable oil
2 cups powdered sugar
1/4 cup butter
6 oz cream cheese

Recipe Directions for Carrot Cake

  1. In a mixing bowl, add spelt flour, baking powder, baking soda, allspice, nutmeg, cinnamon, and salt. Stir together and mix well.

  2. In a food processor, grate carrots and then add to the previous mixture, tossing until carrots are well-covered.

  3. In a second mixing bowl, mix together eggs, vegetable oil, sugar, and brown sugar.

  4. Add the wet mixture to the carrot mixture, once mixed, pour into a greased cake pan

  5. Put in the oven at 350 F for 45 minutes, then 25 minutes at 325 F.

  6. Meanwhile, to make cream cheese frosting...

  7. Add cream cheese, powdered sugar, and butter in a mixing bowl and mix with an electronic mixer for about 2 minutes on high. Once frosting is creamy and fluffy, frost and decorate your carrot cake.
