Quick and easy brazilian style carrot cake.

Recipe Ingredients for Carrot Cake

4 carrots
1/2 cup canola oil
1/2 cup butter
3 eggs
2 cups flour
1 cup sugar
1 tbsp baking powder

Recipe Directions for Carrot Cake

  1. Blend (in a blender or with a hand mixer) the carrots, oil, butter ans eggs, until it becomes a soft cream.

  2. Add in flour, sugar ans baking powder and mix with a wooden spoon.

  3. Lay on a tray previously prepared with baking paper.

  4. Bake in pre-heated oven, 180C, until brown and shiny on top.

  5. Serving options: with sugar and cinnamon on top, with chocolate icing, or with greek style yoghurt (hmmmmmm!!)
