Carrot cake never really goes out of style.

Recipe Ingredients for Carrot Cake

1 cup almonds
2 1/2 cups finely grated carrot
2 cups all-purpose flour
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
4 large eggs
1 1/2 cups brown sugar
1 cup vegetable oil
1/2 cup chopped pineapple

Recipe Directions for Carrot Cake

  1. Beat eggs, sugar and vegetable oil together until creamy

  2. Sift flour, cinnamon, baking soda, baking powder and salt together

  3. Add to egg mixture

  4. Fold in carrots, pineapple and almonds

  5. Grease loaf pan and pour in batter

  6. bake at 350 degrees for 30 - 40 minutes or until knife inserted comes out clean.
