Sugar free whole wheat nut carrot cake

Recipe Ingredients for Carrot Cake

4 cups grated carrots
2 1/2 cups whole wheat flour
2 cups splenda
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon baking soda
1 1/2 cups oil
1 cup chopped pecans
2 tablespoons hot water
4 eggs
1/2 cup raisins

Recipe Directions for Carrot Cake

  1. Add all ingrediants except eggs. Separate eggs, adding 1 yolk at a time after beating after each addition. Beat thorougly, fold in egg whits, stiffly beaten.

  2. Bake at 350 degrees for 1 hour and 5 minutes in a greased tube or rectangle pan

  3. can use fat free whipped cream for topping if needed
