Carrot cake that uses applesauce instead of oil.

Recipe Ingredients for Carrot Cake

4 eggs
1 1/2 cups applesauce
2 cups sugar
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
2 teaspoons cinnamon
2 cups grated carrots
1 cup crushed pineapple
1 teaspoon vanilla

Recipe Directions for Carrot Cake

  1. Preheat oven to 350

  2. Combine eggs, applesauce and sugar and mix on low speed

  3. Slowly add flour, baking powder and baking soda and continue to mix on slow

  4. Add vanilla and cinnamon and mix

  5. Stir in grated carrots and crushed pineapple

  6. Pour batter in pre greased and floured 8" cake pans and bake until toothpick inserted comes out clean
