Mother's award-winning secret recipe

Recipe Ingredients for Carrot Cake

2 cups all-purpose flour
1 1/2 cups wheat germ
3 tsp baking powder
1 1/2 tsp salt
1 1/2 tsp cinnamon
1 1/3 tsp nutmeg
2 cups packed brown sugar
1 1/2 cups canola oil
4 eggs
1 1/2 tsp vanilla
3 cups grated carrots
6 oz cream cheese
2 tbsp margarine
1 cup powdered sugar

Recipe Directions for Carrot Cake

  1. Combine flour, wheat germ, baking powder, salt and spices on wax paper. Stir well to blend.

  2. Beat sugar, oil, eggs and vanilla togethr in large bowl.

  3. Add carrots mixing well.

  4. Stir in blended dry ingredients.

  5. Spread in greased and floured 10-inch bundt pan.

  6. Bake at 350 for 60-0 minutes until wooden pick inserted in center comes out clean.

  7. Cool in pan for 10 minutes. Removed from pan. Cool on rack.

  8. Serve with cream cheese sauce (below)

  9. Cream cheese sauce:

  10. Cream cheese butter and vanilla together thoroughly.

  11. Add sugar gradually beating until creamy. Makes 1 1/3 cups.
