Recipe Ingredients for carrot cake

1 c flour
1 c (whole wheat) flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp allspice
1/2 tsp salt
3/4 c sugar
1/2 c brown sugar
3/4 c (canola) oil
1/2 c applesauce
3 eggs
1 c raisins
3 c (shredded) carrots
8 oz (light) cream cheese
1 1/2 c (confectioners) sugar

Recipe Directions for carrot cake

  1. cream sugar, eggs, applesauce and oil

  2. add sifted ingredients

  3. fold in carrots, raisins and chopped walnuts

  4. bake at 350 for 25-30 minutes
