Carrot Cake with Cream Cheese Frosting

Recipe Ingredients for Carrot Cake

1 cup flour
1/2 cup whole wheat flour
1 cup sugar
1/2 cup sweetened flaked coconut
2 tsp baking soda
1/2 tsp salt
2 tsp ground cinnamon
3 tbsp yogurt
3 egg whites
2 cups grated carrot
2 cups shredded zucchini
1/2 cup pineapple juice
1 tbsp salted butter
4 oz. low fat cream cheese
1 1/2 cups powdered sugar
1 tsp vanilla extract

Recipe Directions for Carrot Cake

  1. Preheat oven 350 degrees

  2. 1. Combine flour, sugar, coconut, baking soda, salt and cinnamon in large bowl; mix with a whisk. Combine yogurt and egg whites; stir well. Add egg mixture, grated carrot, shredded zucchini, pineapple juice into flour mixture. Stir well.

  3. Spoon batter into Bundt pan coated with cooking spray. Bake at 350 until wooden pick comes out clean.

  4. Frosting:

  5. combine softened butter and cream cheese in a large bowl. Beat with mixer at medium speed until smooth. Beat in powdered sugar and vanilla just until smooth. Pour frosting over cake.
