from Laura Suggestions: 1) Use 1:1 ratio of brown sugar to replace sugar 2) Add an extra teaspoon of vanilla extract 3) Add 1 8oz. can of crushed pineapple, juice squeezed out 4) Add 1/4 teaspoon of nutmeg 5) Add 1 extra teaspoon of cinnamon 6) Use 3/4 cup canola oil and 1/2 cup applesauce. For the frosting, Use 3.5 cups of powdered sugar.

Recipe Ingredients for Carrot Cake

2 eggs, beaten (room temp.)
1 cup all-purpose flour
1 cup sugar
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp baking soda
1 1/2 cups finely shredded carrots (lightly packed)
1/2 cup cooking oil

Recipe Directions for Carrot Cake

  1. Preheat oven at 350 degrees

  2. Grease and flour one 9x1 1/2-inch round cake pan; set pan aside. In a large mixing bowl stir together flour, sugar, baking powder, cinnamon, baking soda.

  3. In medium bowl combine eggs, carrots, and oil. Add egg mixture to flour mixture; stir just until combined. Pour batter into pans.

  4. Bake at 350 degrees for 30-35 minutes or until a wooden toothpick inserted near center comes out clean. Cool on wire racks for 10 minutes then remove from pans. Cool thoroughly on racks.

  5. Frost tops and sides with cream cheese frosting. If desired, sprinkly chopped pecans over frosting.

  6. Store cake in refrigerator for up to 3 days.

  7. The hardest thing is grating the carrots (finely). It just gets tiring! A suggestion I have is to cut wax paper in circles to line the bottom of the pans before greasing and flouring them to keep cakes from sticking.
