Nice, moist, carrot cake with carrots and walnuts.

Recipe Ingredients for Carrot Cake

4 oz butter
5 oz brown sugar
1 tsp salt
3 oz eggs
5 oz cake flour
0.16 oz baking powder
1/8 tsp baking soda
1/2 tsp cinnamon
1/8 tsp nutmeg
4 oz milk
2 oz carrots
1 oz walnut

Recipe Directions for Carrot Cake

  1. Scale ingredients accurately. Have all ingredients at room temperature.

  2. Place butter in mixing bowl, with paddle attachment, beat the fat slowly until it is smooth and creamy.

  3. Add sugar; cream mixture at moderate speed until it is light and fluffy; add salt.

  4. Add eggs a little at a time; mix until light and fluffy.

  5. Scrape down sides of the bowl to ensure even mixing.

  6. Add sifted dry ingredients, including spices, alternate with liquid.

  7. Stir in carrots and walnuts.

  8. Bake 375 for about 25 minutes.
