It's fattening, I don't care, I only have it once a year lol. I suppose it could be altered with applesauce instead of the oil, and fat free cream cheese and margarine for the frosting, and possibly splenda.

Recipe Ingredients for Carrot Cake

1 1/2 cup oil
2 cups sugar
4 eggs
2 cups grated carrots
8 oz crushed pineapple
1 cup chopped walnuts
1 cup sweetened coconut
2 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
2 tsp nutmeg
2 tsp allspice
1/2 tsp salt
8 oz cream cheese
1/4 lb butter
2 tsp vanilla
1 lb powdered sugar

Recipe Directions for Carrot Cake

  1. Blend together oil, sugar, and eggs.

  2. Add in carrots, pineapple, nuts and coconut.

  3. Sift in dry ingredients.

  4. Prepare a 9x13 baking pan with oil and flour.

  5. Bake at 350 for 40-60 mins till a toothpick inserted in the center comes out clean.

  6. Icing: blend together cream cheese, butter, vanilla, and powdered sugar.
