Carrot Cake with almonds and a citrus glaze.

Recipe Ingredients for Carrot Cake

3 tablespoons sugar
2 tablespoons water
1 1/4 teaspoon lemon juice
1 1/2 cups flour
2 teaspoons cinnamon
1/4 teaspoons ginger
2 teaspoons baking powder
1 cup brown sugar
1/2 teaspoon salt
3 tablespoons canola oil
3 tablespoons unsweetened applesauce
1 teaspoon vanilla
3 tablespoons butter
1 cup orange juice
1 1/2 cup grated carrot

Recipe Directions for Carrot Cake

  1. Mix wet ingredients, reserving water, 1 tsp lemon juice, and 3 tbsp sugar.

  2. Mix dry ingredients.

  3. Mix dry & wet. Fold in almonds and carrots.

  4. Bake @ 355 for 30 minutes in a greased pan.

  5. Boil sugar and water together. Take off heat, add lemon juice, and brush over hot cake.
