Yummy yet relatively low cal carrot cake, inspired by www.eatingwell.com

Recipe Ingredients for Carrot cake

180 g flour
1 tsp baking powder
1 1/2 tsp cinnamon
1/4 tsp salt
100 g egg
140 g sugar
1/2 g vanilla
50 g oil
200 g milk
20 g coconut flakes
20 g walnuts
300 g carrots
125 g mascarpone
30 g lemon
30 g sugar

Recipe Directions for Carrot cake

  1. Mix flour, baking powder, salt, cinnamon, vanilla, sugar and coconut flakes

  2. Add a teaspoon of lemon juice to the milk, wait for it to curdle

  3. In a separate bowl, mix eggs, milk and oil

  4. Mix together the wet and dry ingredients, add grated carrots and walnuts

  5. Bake for ~40 minutes at 180C

  6. Let cool completely before putting on the topping

  7. Topping: whisk together mascarpone, all the remaining lemon juice and sugar

  8. Spread the topping evenly on the now cooled cake

  9. ENJOY!
