i got this recipe from my cookbook, but i added a twist by using whole wheat flour, no calorie sweetener and also applesauce instead of oil to make the cake moist.this is one of my favoride desserts especially when am on diet.

Recipe Ingredients for carrot cake

2 cups wheat flour
2 cups powdered sugar
3 cups shredded carrots
3/4 cup unsweetened applesauce
4 egg
2 tsp baking powder
1/2 tsp baking soda
1 cup walnuts

Recipe Directions for carrot cake

  1. turn on oven to 350 degrees F and grease a cake pan.

  2. let eggs stand at room temp for about 30 minutes.

  3. mix in a large bowl flour, baking powder, baking soda, sugar and walnuts.

  4. in a seperate bowl whisk together eggs, carrots and applesauce.

  5. pour egg mixture to flour and whisk together until well mixed.

  6. pour everything in cake pan and bake for about 45 minutes or until done.
