Very creamy and unhealthy carrot cake.

Recipe Ingredients for Carrot Cake

256 g caster sugar
225 g vegetable oil
4 eggs
450 g grated carrot
275 g plain flour
1 1/2 tsp bicarbonate of soda
1 1/2 tsp baking powder
1 tsp ground cinnamon
1 tsp ground allspice
115 g butter
125 g cream cheese
385 g icing sugar
1 tsp vanilla extract

Recipe Directions for Carrot Cake

  1. To make cake, Mix caster sugar, oil and eggs together. Add grated carrot and mix again

  2. Sieve flour, bicarb of sode, bakign powder and spices int a bowl.

  3. Mix flour, etc into carrot mixture.

  4. Pour mixture into a greased bottom lined dish (wide and shallow for a tray bake, 2x cake tin for a layer cake).

  5. Bake at 180 (as mark 4) for around 45 mins. Keep checking after 35 mins.

  6. To make frosting, mix soft cheese and softened butter together. dd vanilla extract andenough icing sugar to make a paste (2 to 3 cups).
