The first Carrot Cake I ever made. I've made nice since, with walnuts and carrots but this is so simple, even a child could make it

Recipe Ingredients for Carrot Cake

8 oz wholemeal flour
8 oz brown sugar
4 tsp. baking powder
3 tsp. cinnamon
1 tsp. salt
12 oz carrot, grated
4 eggs, beaten
1/2 cup vegetable oil

Recipe Directions for Carrot Cake

  1. Preheat oven to 180C.

  2. Mix together the flour, sugar, baking powder, cinnamon and salt.

  3. Add the carrot and mix well to combine.

  4. Add the eggs and the oil to the mix, combine well.

  5. Pour mixture into a 1lb loaf tin and bake for 1 hour.

  6. Cut into 12 slices when cool.
