Thin layer of carrot cake rolled up around a delicious cream cheese filling.

Recipe Ingredients for Carrot Cake Pinwheels

1/2 cup Quick Cooking Oats
1/2 cup Flour
1 1/2 teaspoons Ground Cinnamon
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/4 teaspoon Sea Salt
1 cup Turbinado Sugar
6 1/2 oz Carrot
1/2 cup Raisins
1/4 cup Applesauce
1/2 cup Shredded Coconut
6 oz Neufchatel
2 tablespoons orange marmalade (low sugar)
1/4 cup Apple Juice

Recipe Directions for Carrot Cake Pinwheels

  1. Soak raisins in 1/4 cup apple juice to rehydrate.

  2. Grind oats and next 5 ingredients in magic bullet or food processor until finely ground.

  3. In a separate bowl cream the sugar with eggs and applesauce.

  4. Add flour to sugar mixture. Stir in carrots. Drain apple juice out of the raisins and stir in as well.

  5. Spread thinly in a small cookie sheet lined with parchment paper and bake at 325 for about 45 minutes.

  6. Blend a block of neufchatel with 3 Tablespoons of low sugar orange marmalade.

  7. Toast coconut over medium heat in a small skillet. Stir often, coconut burns easily!

  8. Cool, Ice, Sprinkle with Toasted Coconut and Roll Up. Slice into pinwheels
