Recipe Ingredients for Carrot Cake Pancakes

1 1/4 c. all-purpose flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1/8 tsp. nutmeg
1 dash ground clove
1 dash ground ginger
1/4 c. brown sugar
3/4 c. low fat buttermilk
1 tbsp. canola oil
1 1/2 tsp. vanilla extract
2 large eggs
2 c. grated carrot

Recipe Directions for Carrot Cake Pancakes

  1. Misx first 7 ingredients with a whisk.

  2. Combine next 5 ingredients.

  3. Combine both, and fold in carrots.

  4. Use 1/4 c. scoop, and spread pancakes out with a rubber spatula.

  5. Cook over medium heat.
