Recipe Ingredients for Carrot Cake Muffins

1 1/2 cups whole-wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/4 cup brown sugar
2 egg white, lightly beaten
2 tsp sunflower oil
1/2 cup 2% milk
1 1/2 cups grated carrots
1/2 cup apple sauce
1/4 cup walnuts, chopped
2 teaspoons vanilla extract
1/8 tsp salt

Recipe Directions for Carrot Cake Muffins

  1. Set oven to 350 degrees.

  2. Line 12 muffin tins with paper liners or spray tins with non-stick cooking spray.

  3. In a large bowl mix together first 7 ingredients.

  4. In a small bowl whisk together egg, oil, milk, applesauce and vanilla.

  5. Add the carrot to the oil/egg/applesauce mixture and mix well to combine, then add to the dry ingredients; mix JUST until combined.

  6. Add in the chopped nuts.

  7. Divide the mixture between the 12 muffin tins.

  8. Bake for about 20-25 minutes, or until the muffins test done.
