This is a recipe from one of my many cooking magazines. My mother-in-law's favorite!

Recipe Ingredients for Carrot Cake Muffins

1/2 cup brown sugar
1/3 cup canola oil
1/2 cup unsweetened applesauce
3 eggs
1 tsp vanilla
1 3/4 cups whole wheat flour
1/4 cup wheat germ
2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
1/2 cup golden raisins
1/4 cup sweetened flaked coconut
2 cups grated carrots
1 cup pecans, chopped
8 oz crushed pineapple, drained
1/4 cup skim milk

Recipe Directions for Carrot Cake Muffins

  1. Heat oven to 400 degrees and line a muffin pan with liners.

  2. Combine ingredients until well blended.

  3. Spoon into muffin cups and bake for 20-25 minutes.
