Recipe Ingredients for Carrot Cake Cupcakes

1 cup Sugars, Granulated
1 cup Wheat Flour, White, All-purpose, Unenriched
1 tsp Leavening Agents, Baking Soda
0.5 tsp Salt, Table
3 medium Carrots
1 tsp Cinnamon, Ground
0.25 tsp Nutmeg, Ground
0.5 tsp Ginger, Ground
0.67 cup Olive Oil
2 large Egg, White
0.5 cup pieces or chips Walnuts, English

Recipe Directions for Carrot Cake Cupcakes

  1. Whisk flour, baking soda, salt, cinnamon, nutmeg and ginger in medium bowl to blend.

  2. Whisk sugar and oil in large bowl until well blended.

  3. Whisk in eggs 1 at a time.

  4. Add flour mixture and stir until blended.

  5. Stir in carrots, walnuts and raisins, if using them.

  6. Divide batter among cupcake molds, filling 3/4 of each.

  7. Bake cupcakes 14 to 18 minutes, or until a tester inserted into the center of one comes out clean.

  8. Let cool in pans for five minutes or so, then transfer cakes to a cooling rack.

  9. Let cool completely before icing them.
