3 cups grated carrots
2 cups flour
2 cups sugar
2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
4 eggs
1 1/2 cups vegetable oil
1 1/4 teaspoon vanilla extract
8 ounces crushed pineapple with juice
3 1/2 cups confectioners' sugar
8 ounces cream cheese
1 1/4 teaspoon vanilla extract

Recipe Directions for Carrot Cake Cupcakes

  1. combine carrots, flour, sugar, baking soda, baking powder, salt, and cinnamon.

  2. stir in eggs, oil, vanilla, and pineapple.

  3. fill muffin tins 3/4 full.

  4. bake 12 minutes.

  5. beat powder sugar, cream cheese, butter, and vanilla until smooth.
