Fresh carrots, splenda and applesauce (no oil)

Recipe Ingredients for Carrot Cake or cupcakes

3 eggs
2 egg whites
2 cups splenda
1 cup applesauce, unsweetened
3 tsps cinnamon
2 tsps baking soda
1 tsp salt
3 cups carrot, grated
2 cups confectioner's sugar
2 tbsp margarine
1 tsps vanilla

Recipe Directions for Carrot Cake or cupcakes

  1. Beat eggs, splenda and oil until lemon colored.

  2. Sift flour, cinnamon, soda and salt then add egg mix.

  3. Add carrots and chopped nuts (optional).

  4. Bake at 350F.

  5. Check after:

  6. Two 9-inch layer pans 30 minutes.

  7. One Bundt cake pan 35 minutes.

  8. Cupcakes 20 minutes.

  9. Top after cake is cooled.

  10. Blend confecioner's sugar, margarine and vanilla.
