Recipe Ingredients for Carrot Cake With Cream Cheese Frosting

1 3/4 cups all-purpose flour
2/3 cup whole wheat pastry flour
2 teaspoons baking soda
1/8 teaspoon salt
1 teaspoon ground cinnamon
3/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
165 g brown sugar
3 tablespoons vegetable oil
3 egg whites
3 cups carrots
1/3 cup raisins
1/3 cup walnuts, chopped
2/3 cup nonfat buttermilk
2 teaspoons vanilla extract
6 1/2 ounces crushed pineapple
1 cooking spray
2 teaspoons Smart Balance 37% spread
6 ounces light cream cheese
1 cup powdered sugar
3/4 teaspoon vanilla extract
1/8 cup cornstarch (optional)

Recipe Directions for Carrot Cake With Cream Cheese Frosting

  1. Combine first 7 ingredients in a medium bowl; stir well.

  2. Combine sugar and oil in a large bowl; stir well. Add eggs, one at a time, beating well with a wire whisk after each addition. Stir in carrot, raisins, walnuts, buttermilk, vanilla, and pineapple. Add flour mixture, and stir well.

  3. Spoon batter into a 9x13-inch pan coated with cooking spray. Bake at 350 for 30 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack.

  4. Beat Smart Balance and cream cheese at high speed until fluffy. Gradually add sugar; beat at low speed until well blended. Add vanilla; beat well. If icing is thin, beat in cornstarch, 1/2 tbsp at a time.

  5. Spread Cream Cheese Icing over top of cooled cake.
