Recipe Ingredients for Carrot Cake (almost no fat)

2 c flour
2 c sugar
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp cinnamon
1 pinch salt
4 eggs
15 oz pineapple, crushed
3 c carrots, finely grated
6 oz cream cheese
1/3 c butter
2 1/2 c powdered sugar
2 tsp vanilla
1/2 c coconut (optional)
1/2 c pineapple, crushed (optional)

Recipe Directions for Carrot Cake (almost no fat)

  1. For cake:

  2. Mix flour, sugar, baking soda, baking powder, cinnamon and salt.

  3. Add eggs. Mix well. Then mix in crushed pineapple and carrots.

  4. Bake in 9"x13" pan at 350 F for 45 min.

  5. Let cake cool and frost with Cream Cheese Frosting.

  6. For Frosting:

  7. Beat together cream cheese, butter, powdered sugar and vanilla. Add in coconut, pineapple and nuts if desired.
