A child friendly soup. The cabbage and cauliflower virtually disappear. I told my fussy 5 year old that it was Mrs Bunny's carrot soup and she ate the lot and asked for more!! It's vegetarian if you use vegetable stock.

Recipe Ingredients for Carrot and Butternut Soup

150 g sweet potato
100 g carrots
150 g butternut squash
85 g cabbage
85 g cauliflower
1 litre stock

Recipe Directions for Carrot and Butternut Soup

  1. Peel chop and wash all vegetables

  2. Bring stock to the boil

  3. Add chopped vegetables to the stock

  4. Cover and simmer gently for 1 hour or until all vegetables are tender.

  5. Remove from the heat and mash gently with a potato masher or cool completely and blend for a smooth soup.
