Recipe Ingredients for Carrot Broccoli Stem Frittata

6 large eggs
2 large carrots
1 cup broccoli stems
2 tbsp sunflower oil

Recipe Directions for Carrot Broccoli Stem Frittata

  1. Shred carrots and broccoli stems

  2. Beat eggs

  3. On high heat, saute carrots and broccoli until just starting to brown

  4. Lower heat to medium

  5. Add eggs and mix in until scrapings from bottom and sides looked cooked (mixture should still be wet)

  6. Let set

  7. Turn over and cook other side (if it doesn't hold together, then it simply becomes a scramble rather than a frittata)
