Recipe from Eat Clean Cookbook. Used quinoa instead of cornmeal and did not add the raisens and cranberries.

Recipe Ingredients for Carrot Bread

400 grams carrots
1 1/4 cup whole wheat flour
1 1/4 cup quinoa
1/4 cup ground flax seed
1 tsp salt
1 1/2 tsp baking powder
3 egg whites
1 egg yolk
2 tbls canola oil
1/2 cup honey
3/4 cup 1% milk

Recipe Directions for Carrot Bread

mix all dry in one bowl, mix yolk and rest of wet in anouther. beat the egg whites seperately till stiff peaks. mix wet and dry and fold in the egg whites. do not overmix. bake at 375 for 60 minutes
