Makes 4 loaves of bread, Serving size is based on 15 slices per loaf.

Recipe Ingredients for Carrot Bread

2 cups olive oil
3 cups sugar
6 large eggs, beaten
1 cup buttermilk
5 cups flour
1 cup whole wheat flour
2 tablespoons baking powder
4 teaspoons cinnamon
1/2 teaspoon salt
1 tablespoon baking soda
6 cups finely grated carrots
2 cups walnuts, chopped

Recipe Directions for Carrot Bread

  1. Blend sugar, oil, eggs & buttermilk.

  2. Blend flour, baking poweder, cinnamon, salt, & soda.

  3. Add flour mixture to sugar mixture.

  4. Stir in carrots and nuts.

  5. Pour into 4 well greased bread bans (8x4x3)

  6. Bake at 325 F for about 45 minutes or until toothpick inserted in the middle comes out clean.
