Carrot bread I've altered from the original found under Lite Carrot Cake in my Allrecipes box.

Recipe Ingredients for Carrot bread

2 cups whole wheat flour
1 cup packed brown sugar
3 tbsp white sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
3 eggs
1/3 cup applesauce
2/3 cup fat free milk
1 tbsp lemon juice
1 1/2 cups grated carrots

Recipe Directions for Carrot bread

  1. preheat the oven to 350* Lightly grease and flour 9 x 13 pan, or two 9" round cake pans or muffin tins.

  2. Combine milk and lemon juice.

  3. Beat egg whites until frothy, gradually add 3tbsp sugar and continue beating until stiff

  4. In a bowl, combine all the remaining dry ingredients, flour, brown sugar, baking powder, baking soda, cinnamon.

  5. add applesauce, milk and egg yolks

  6. fold in the egg whites

  7. gently stir in the carrots

  8. bake in the oven for 25-35 minutes
