Lauren's Recipe (based off Food Network)

Recipe Ingredients for Carrot Bread

2 cups flour
1 1/2 cups carrots
1 tablespoon baking soda
1 cup vegetable shortening
1 tablespoon baking powder
1 tablespoon vanilla
1 tablespoon salt
3/4 cup pineapple
2 eggs
1/2 cup walnuts
1 cup sugar
1 tablespoon cinnamon
1/2 cup raisins

Recipe Directions for Carrot Bread

  1. preheat oven 350 degrees

  2. combine flour, baking powder, salt & mix with fork in medium bowl

  3. combine eggs and sugar in large bowl

  4. grate carrots in food processor

  5. add carrots, oil, vanilla, pineapple, walnuts and cinnamon to egg mixture

  6. slowly add flour mixture to wet mixture until completely combined

  7. pour batter into two greased loaf pans

  8. baked for 45 minutes
