Recipe Ingredients for Carrot Bread

2 c. whole wheat flour
2 tsp Cinnamon, ground
1 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
2 c. sugar
3/4 c. unsweetened applesauce
3 eggs
1 tsp vanilla extract
1 1/2 c. carrots, grated
1 c. walnuts, chopped

Recipe Directions for Carrot Bread

  1. Preheat oven to 350 degrees.

  2. Butter and flour a 9x5x3 inch loaf pan.

  3. Stir first five ingredients into medium bowl.

  4. Beat sugar, oil, eggs, and vanilla to bend in a large bowl.

  5. Mix in carrot.

  6. Add dry ingredients and walnuts and stir well.

  7. Transfer batter to prepared pan.

  8. Bake until tester inserted into center comes out clean. About 1 hour and 20 min.
