Recipe Ingredients for Carrot Bran Muffins

1.5 cup Wheat Bran, Crude
1 cup Milk, Nonfat, Fluid
1/2 cup Unsweetened Applesauce
1 large Egg, Whole
0.33 cup, packed Sugars, Brown
0.5 tsp Vanilla Extract
1 cup Whole Wheat Flour
1 tsp Baking Powder
0.5 tsp Table Salt
1 tsp Baking Soda
1 cup, grated Carrots

Recipe Directions for Carrot Bran Muffins

  1. Heat oven to 350.

  2. Mix bran and milk and let stand for 10 minutes.

  3. Mix applesauce, egg, sugar, and vanilla. Beat in bran mixture.

  4. Sift flour, baking powder, baking soda, and salt. Stir into bran mixture until just blended. Add in carrots and mix until well dispersed.

  5. Bake for 15-20 minutes. Makes 18 muffins.
