Recipe Ingredients for Carrot Bran muffins

1 cup whole wheat flour
1 1/2 cup bran cereal
1 tbs wheat gluten flour
2 tbs milled flax seed
1 tsp baking soda
1 tsp baking powder
1/4 tsp nutmeg
1/4 tsp coriander seed
1/2 tsp salt
1/3 cup apple sauce
1/3 cup honey
1 egg
3 shredded carrots
1 tsp vanilla
1 cup 1% milk

Recipe Directions for Carrot Bran muffins

  1. Preheat oven to 375. Grease 1 12 cup muffin pan.

  2. Shred your carrots.

  3. Crush bran cereal in a zipped sandwich bag with a rolling pin, and let soak in milk for 10 minutes.

  4. Cream applesauce, egg, honey, and vanilla.

  5. In a separate bowl combine the flour, wheat gluten, flax, baking soda, powder, salt and spices.

  6. Slowly add to applesauce mixture.

  7. Fold in carrots.

  8. Bake until golden brown and toothpick comes out clean (15-20 minutes).
