Recipe Ingredients for Carrot-Bran Muffins

1 cup skim milk
1/4 cup canola oil
1 egg, lightly beaten
1 1/2 cups wheat bran (Fiber One Cereal)
1 cup carrots, shredded
1 1/4 cups flour
1/3 cup sugar
1 tbsp. baking powder
1/2 tsp. salt
3/4 tsp. ground cinnamon
1 cup raisins, dark seedless

Recipe Directions for Carrot-Bran Muffins

  1. Prep: 15 min. plus standing Bake: 30 min.

  2. Preheat oven to 400 degrees. Grease twelve muffin tins or use baking cups.

  3. In medium bowl, with fork, beat milk, oil, egg, cereal and carrots until blended; let stand for 10 min.

  4. Meanwhile, in a large bowl, combine flour, sugar, baking powder, salt, and cinnamon. Add cereal mixture to flour mixture; stir just until dry ingredients are moistened (batter will be lumpy). Stir in raisins.

  5. Spoon batter into prepared muffin-pan cups. Bake until muffins begin to brown and toothpick inserted in center of muffin comes out clean, about 30 min. Immediately remove muffins from pan. Serve warm, or cool on wire rack to serve later.
