Creamy soup - healthy and satisfying.

Recipe Ingredients for Carrot Bisque

2 tbs olive oil
2 large onions, chopped
32 oz baby carrots
2 quarts chicken broth
1/2 cup half and half
1/2 cup white wine

Recipe Directions for Carrot Bisque

Saute onions for two minutes; add carrots and saute 5 minutes more. Add chicken broth; simmer for 20 - 30 minutes until tender. Use immersion blender to puree until silky smooth. Add half and half, then wine if desired. Top with freshly grated nutmeg and a teaspoon of LF sour cream or yogurt.
