Recipe Ingredients for Carrot-Beet Slaw from Clean Eating June 2012

70 g beets, shredded
50 g carrots, shredded
70 g jicama, shredded
1/2 c fresh cilantro
10 g peanuts, chopped
14 g almond butter
1 tbsp lime juice
1 tsp honey
1/2 tsp low-sodium soy sauce
1/2 tsp ginger, grated

Recipe Directions for Carrot-Beet Slaw from Clean Eating June 2012

  1. Combine carrot, beet, jicama, cilantro and peanuts in a bowl and toss gently.

  2. In a small bowl, whisk 2 tbsp water, almond butter (or tahini), lime juice, honey, soy sauce and ginger until well blended. Add 2tbsp plus 2 tsp almond butter mixture to crrot-beet slaw and toss to coat. Rest of mixture to be used on Tuna Burgers.
