Recipe Ingredients for Carrot Banana Muffins

2 cup, grated Carrots
2 egg Grade A Large Organic Eggs
1 cup Organics Applesauce
4 oz Vanilla Fat Free Yogurt
4 oz Ocean Spray Orange Juice
2 medium (7" to 7-7/8" long) Bananas
24 teaspoon Pure Cane Sugar
1 tsp Cinnamon, Ground
1.5 tsp Leavening Agents, Baking Soda
1.5 Teaspoon Baking Powder
1.75 cup Gold Medal All Purpose Flour
0.25 tsp Salt, Table

Recipe Directions for Carrot Banana Muffins

  1. Preheat oven to 350.

  2. Mash bananas, mix in the rest of the wet ingredients until blended. Mixture will be lumpy.

  3. Combine dry ingredients in a separate bowl, then mix into wet ingredients just until blended. Do not overmix, leave it lumpy.

  4. Spoon into lined or pregreased muffin tins. Bake 15-20 minutes or until browned on top and springy to the touch.
