Rainbow Salsa made with avocados and rainbow swiss chard for crackers or toast.

Recipe Ingredients for Carrie Case's Rainbow Salsa

2 cups organic rainbow swiss chard ? about 2 bunches
6 t lemon juice
2 diced avocados
1/2 t kosher salt
1 t lime juice

Recipe Directions for Carrie Case's Rainbow Salsa

  1. Rainbow chard is not always easy to find and when I do find it, it?s almost always in the organic section. Look for the brightly colored stalks. I find it?s generally dirty.

  2. Prepare the rainbow swiss chard by trimming leaves off ends. Rinse stalks while rubbing clean. Dice rainbow swiss chard and rinse again by placing in bowl with water to soak clean. Strain by dumping into colander and placing on paper towel to lightly pat dry. Once it?s back in the bowl pour 2 t of lemon juice on rainbow chard.

  3. Dice 2 avocados. Cut avocado in half and score as shown in picture. Squeeze out or for smaller chunks scoop out with spoon. Mix avocado with rainbow chard and sprinkle t of kosher salt (or any salt you have available), 4 t of lemon juice and 1 t of lime juice into the mix.

  4. Viola! Eat with Triscuit Thin Crisps (any flavor tastes excellent) or toast!

  5. I?ve made this dip many times and never seem to have all the right ingredients ? below are some alternatives.

  6. NOTES: Lemon juice may need to be added to your recipe if you notice the avocado turning brown. Additions I?ve tried, generally very small amounts: (may need to add more salt or juice) - Diced green pepper, 1 jalapeno , 2 Stalks of green onion, Fresh cilantro (very strong flavor so be careful with this one)
