serve over rice, instead of adding meat, we grilled chicken legs to eat with it!

Recipe Ingredients for Carribean veggie stew

3 cups chicken broth
1/2 cup sweet potato, diced
1/2 cup red potato, diced
1 cup celery, diced
1 cup onion, sliced
1/2 cup bell pepper, diced
1 tbsp garlic paste
1 cup tomatoes, diced
2 tsp half and half
2 tsp olive oil
1/2 cup lentils, cooked
1/2 cup carrots, diced
1 tsp cinnamon
1 tsp black pepper
1 tsp red pepper flakes

Recipe Directions for Carribean veggie stew

  1. saute veggies except potatoes

  2. boil lentils in broth

  3. add lentils and broth to sauteed veggies

  4. add tomatoes and potatoes now

  5. simmer for 30 minutes

  6. scoop out half of the veggies and liquid and blend in blender, adding half and half, return to the rest of the soup

  7. heat through and serve over rice if you want
