vegetarian basmati rice and beans. tobasco sauce, chopped coriander and/or lime juice may be added to serve, but has not been counted in this recipe.

Recipe Ingredients for carribean rice

1 small onion
2 cloves garlic
1 tbsp olive oil
1 yellow pepper
1 tsp oregano
1 tsp thyme
1 tsp allspice
225 g basmati rice
2 spring onions
225 g chopped tomatoes
375 ml water
400 g kidney beans

Recipe Directions for carribean rice

  1. peel and finely chop onion and garlic.

  2. heat oil, fry onion and garlic for five minutes.

  3. wash core and deseed pepper, coursely chop.

  4. stir pepper into the onion mixture and cook another 5 minutes.

  5. add rice to veg mix in pan. stir thouroughly to coat and cook for three minutes.

  6. add tomatoes and finely chopped sring onions and stir.

  7. add water and stock cube. coer pan, reduce heat and simmer for 8mins.

  8. drain and rinse kidney beans, add to pan. simmer 8 mins longer until liquid is absorbed.
