Pork slow cooked in coconut milk with yams and onions.

Recipe Ingredients for Carribean Pork

3 lbs boneless pork ribs
2 cups coconut milk (1 can)
1/2 cup shredded coconut
2 large onions
6 cups yams (6 large)
1/4 cup brown sugar
2 tablespoons Jamaican Jerk Seasoning
2 cups water
1 chicken bouillon cube
6 cups cooked brown rice

Recipe Directions for Carribean Pork

  1. Rinse pork ribs cutting away any visible fat

  2. Cut pork ribs into cubes and put into slow pot cooker

  3. Slice onions and add to slow pot cooker

  4. Wash, peel, and chop yams into 1x2" cubes, add to slow pot cooker

  5. add water, bouillon, brown sugar, and Jamaican jerk seasoning to crock pot

  6. Cook on high heat for 4-6 hours or until pork is tender

  7. Serve over brown rice
