Spicy and rich, best when served with Cilantro Rice and a little sour cream.

Recipe Ingredients for Carribean Black Bean Soup

1 lb black beans, soaked and drained
1 cup celery, diced
1 cup onion, diced
1 cup carrot, shredded
2 tbl garlic
5 cups chicken broth
2 tsps cumin
1 tsp coriander
1 serrano pepper, finely diced
2 tbl balsamic vinegar

Recipe Directions for Carribean Black Bean Soup

  1. Combine all ingredients and place in a 4-6 quart stockpot. Cook on low for 5-6 hours, high for 3-4 hours or until thickened and beans are fully cooked. Place 4 cups of the soup in a food processor and puree. Add back to the soup and add the vinegar (adding the vinegar sooner will keep the beans from cooking).

  2. Two strips of bacon can also be added during cooking and then removed before serving.
