Tender roasted veggies with a sweet and spicy flair. Can be served alone or with your favorite grain.

Recipe Ingredients for Carribbean Roasted Vegetables

3 medium potatoes, in 1-inch chunks
2 sweet potato, large, in 1-inch chucks
2 red peppers, large dice
1 onion, coarsely chopped
2 carrots, cut in 1/2 inch rounds
2 tbsp olive oil
3 cloves garlic, minced
2 tbsp red wine vinegar
2 tbsp soy sauce
1 tbsp brown sugar
1 tbsp thyme
2 tbsp ginger, grated
1 chili pepper, minced

Recipe Directions for Carribbean Roasted Vegetables

  1. Parboil potatoes, sweet potatoes and carrot for 2 minutes.

  2. Whisk together marinade ingredients

  3. Add in parboiled vegetables, peppers and onion, combine well

  4. Spread vegetable in a large roasting pan in a single layer

  5. Roast at 425 for 45 minutes or until vegetables are tender
