The recipe actually makes 4 servings, but its so good we always eat more than one serving. Also the marinade is 2T soy, juice of 1 lime, pineapple juice from the can of pineapple, 2 T brown sugar (or molasses), 1/2 t allspice.

Recipe Ingredients for Carribbean Chicken Kabobs

8 oz chicken breast, boneless and skinless
2 red bell peppers
1 red onion
6 oz acorn squash
8 oz pineapple
1 t brown sugar
1/4 t allspice
1 T soy sauce
1 T lime juice
1 T pineapple juice
1/4 t hot sauce

Recipe Directions for Carribbean Chicken Kabobs

  1. Cut chicken, and veggies into 1" cubesput chicken and acorn squash in zip-top bag (in a bowl) and add brown sugar, allspice, soy, lime, pineapple, and hotsauce. Marinate at least 1 hour and no more than 4.

  2. Thread chicken and veggies, alternating, onto skewers. And grill basting with marinade til done.
